There are few smugger pleasures in homesteading than walking out on a frosty morning and watching steam rise off a pile of last week’s kitchen scraps. That steam is the sound of billions of microbes working so hard they’ve heated the whole pile to the temperature of a hot bath — and they did it overnight, for free, while you slept.

This is thermophilic composting — “thermophilic” being Greek for “heat-loving,” and also for “your compost is now running a fever, on purpose.” Done right, a hot aerobic pile doesn’t rot. It cooks. It races through decomposition so fast that what was vegetable peelings, coffee grounds, and coop bedding in spring is dark, crumbly, forest-scented compost in three or four weeks.

The trick is that you’re not making garbage. You’re cooking for a crowd, and the crowd has opinions.

Microbes want a balanced diet: roughly equal parts carbon and nitrogen by feel — the “browns and greens” of composting lore. Browns are the carbon: dry leaves, straw, cardboard, wood chips. Greens are the nitrogen: food scraps, fresh grass, green garden waste, manure. Too much brown and the pile sulks along cold and slow. Too much green and it goes slimy and starts to smell like regret. Get the ratio right, keep it as damp as a wrung-out sponge, give it enough air, and the microbes do something genuinely remarkable: they multiply explosively, throw off heat as a by-product of the feast, and drive the pile up past 55°C — hot enough to kill weed seeds and pathogens while the good biology thrives.

Air is the other half of the magic. “Aerobic” means oxygen-breathing, and the microbes that build great compost are aerobes. Turn the pile every few days and you fold in fresh oxygen, reset the heat, and keep the whole operation sweet-smelling instead of swampy. (The rule of thumb: good compost smells like the forest floor. If it smells bad, it’s gone anaerobic, and it’s asking you for a turn.)

What you get at the end isn’t “fertilizer.” It’s living soil food — a dark, sweet-smelling, microbially alive substance that feeds the soil food web, holds water, builds structure, and brings tired ground back to life. Genuinely alive in a way the bagged stuff at the garden centre almost never is.

And here’s the quietly radical part: every scrap that went into that pile was headed for a landfill. Composting is the moment the loop closes — where the waste of your kitchen and garden becomes the fertility of next season’s beds. On Mount Tuam, it’s how we turn the offcuts of an entire farm back into the ground that feeds it. Nothing leaves. Everything becomes soil eventually.

Compost isn’t waste management. It’s the most optimistic thing you can do with a banana peel.
